Pasta with Eggplant & Cocoa Nibs

from Pasta Modern

Serves 6

Ingredients:
1 Eggplant
Olive Oil
Penne pasta, preferably Monograno Felicetti
Cayenne pepper, to taste
Cocoa nibs, to taste

Directions:
Saute diced eggplant in oil until soft, toss with cooked pasta. Top with cayenne pepper, cocoa nibs and ricotta salata to taste. Salty, crunchy, savory!
