Oven-Roasted Veggies

-No!. . .Layers. Onions have layers. Ogres have layers.

-Oh, you both have layers. Oh. You know, not everybody likes onions.

Veggies become incredibly delicious when baked, tasting almost like chips. If you like, add a sliced red onion to the mix. Onion loses its sharpness and becomes candy-sweet with roasting.

  • 8 ounces string beans
  • 4 cups small cauliflower florets
  • 4 cups small broccoli florets
  • 4 large carrots, cut diagonally into 1 2-inch slices
  • salt and pepper

  • 1. Preheat the oven to 425 degrees. Lightly oil 2 large nonstick baking sheets and arrange the vegetables in a single layer on the pans.

    2. Bake for about 30 minutes, or until the vegetables are crisp at the edges and cooked through.

    3. Season to taste with salt and pepper. Serve in large popcorn bowls.
